Happy Thanksgiving and Two Recipes

Happy Thanksgiving to everyone!  Now that all my cousins, sisters, and I are getting older, we are all in charge of bringing food to holidays.  Some of us, like Jessica don’t have to bring anything, and others of us like Molly have to bring corn in the bag and then I, of course, bring dessert.  This year with quite an amount of deciding, I decided on Boston Cream Pie and Ooey Gooey Caramel Pumpkin bars.  Both are delicious and I will show you my gorgeous work and leave you with the yummy recipes!

Boston Cream Pie: (Hershey’s Classic Recipes Cookbook)

Ingredients:

Cake Portion -

1/3 cup shortening

1 cup sugar

2 eggs

1 tsp vanilla extract

1 1/4 cups flour

1 1/2 tsp baking powder

1/4 tsp salt

3/4 cup milk

1. Heat Oven 350 degrees.  Grease and flour 9-inch pan.

2. Mix shortening, sugar, eggs and vanilla until light and fluffy.  Then you are going to add your flour shifted with powder and salt in three parts and adding the milk in two parts.  Every other.

3. Pour into pan and bake for about 30 minutes.

Filling-

1/3 cup sugar

2 tbsp cornstrach

1 1/2 cups milk

2 egg yolks

1 tbsp butter

1 tsp vanilla

Stir together sugar and cornstarch in saucepan, add your milk and egg yolks and whisk together.  Turn burner on medium and stir constantly until mixture thickens.  It will take awhile so be patient.  After it begins to boil, let boil for 1 more minute and then take off.  Add your butter and vanilla and whisk.  Put in bowl and cover with plastic wrap directly on top of the filling.  This will prevent it from getting a film over the top.  Put in fridge to cool.

Glaze-

3 tbsp water

2 tbsp butter

3 tbsp cocoa

1 cup powdered sugar

1/2 tsp vanilla

Heat water and butter in a sauce pan until it begins to boil.  After boiling remove from burner and quickly add in cocoa and whisk until smooth.  Slowly add your powdered sugar and vanilla. Continue to add your powdered sugar until desired thickness.  I added a bit more powdered sugar then recipe.  Cool slightly.

Putting it together-

Take your cake and using a butter knife cut it in half so you have created 2 9 inch round pieces a few inches thick. In between the layers add your filling.  On the top of the cake evenly spread your glaze and viola! you have beautiful Boston Cream Pie.

 

Ooey Gooey Caramel Pumpkin Bars

Ingredients:

3/4 cup butter

1 cup brown sugar

2 eggs

1 tsp vanilla

1 cup pumpkin

1 tsp cinnamon

1/2 tsp nutmeg

1 3/4 cup flour

1 tsp baking soda

1/4 tsp salt

1. Preheat oven to 350 degrees.  Prepare 13X9 inch pan with cooking spray

2. Mix together butter and sugar until light and fluffy.  Add eggs, pumpkin and vanilla and mix until incorporated.  Add your dry ingredients and mix.

3. Spread 2/3 of mix onto the bottom of your pan.  Keep the rest for later.  Now make your filling.

Filling-

1/4 cup chocolate chips

14 ounce bag caramels

1/4 cup heavy cream

1. Sprinkle chocolate chips over the top of your bar in the 13X9 inch pan.

2. Melt your caramels and heavy cream in a saucepan over medium heat.

3. Spread melted caramel over your bar layer.  Now add your remaining 1/3 of your batter on top of the caramel layer.  Try to spread as evenly as possible.

4. Put in oven for 25 minutes and viola!  Yummy pumpkin, holiday bars!!!


Livin’ It Up

The words are just coming and coming with all my excitement from this past Saturday.  Let’s just say it was pretty much the best day EVER.  Don’t you just love days like that?!?  So here we go!  Left our house all cleaned and went off to Old Navy for 75% off all jackets.  I got 2 jackets and a present for Lucy for only $42.00.  Then we were walking around the mall and walked past Sports Authority and Eric Decker (Bronco player #87 if you didn’t know) signing autographs.  He is Molly’s favorite player!  That is enough excitement you would think, but then it was off to the Dierks Bentley concert.  My favorite singer, 17th row!! So at the concert, we were with our friend Whit and she is a huge Avs fan and she had heard Matt Duchene was going to be at the concert.  Her hopes were to see him, but with thousands of people, we figured that wouldn’t happen.  Much to our surprise, he walked pasted us 3 times!  Now that is the best day EVER!

 


Colonel Mustard

I think it was Colonel Mustard in the study with the candlestick.  I have solved the mystery!  Okay not really, but I always loved playing Clue as a kid.  I am a sucker for board games and a good mystery.  Combine the two and you have an amazing game.  Of course, as a kid, who wanted to be Colonel Mustard, no one!  We always had fights over who got to be Ms. Scarlet.  She was the prettiest and everyone’s favorite.  I usually won out and got to be Ms. Scarlet.  However, now that I have a love for mustard yellow, I have bigger appreciation to Colonel Mustard.  Probably still prefer Ms. Scarlet, but Colonel Mustard is a close second.

Today I was felling a bit Colonel Mustard like in my mustard sweater and all black.  It definitely makes it stand out, but who doesn’t love a mustard sweater!  It’s my go to so let’s just say yay for a bit of Colonel Mustard.
