Last Nights Dinner
Posted: April 29, 2011 Filed under: Dinner Leave a comment »Okay, okay, I realize this is two food posts in one week, but I just had to share my staple dinner. So, my sister Molly who I also live with is a pretty picky eater. We found out the other day, she has this new eating disorder that is literally called something like Picky eater disorder. Weird I know, but she is an extremely picky eater. However, she is better at trying new foods. When we lived in Spain, our host mom was the worst cook in the world!!! No joke!! I had a hard time eating any of it. Molly has this amazing talent of choking down gross food, pretty much without tasting it. She even ate cows blood. It is like this nasty jello looking stuff that is dark red like dried blood. I tried it and wanted to vomit, but Molly ate lots!! Pretty darn amazing!
Anyways the point of the little rant was, we eat a lot of chicken and potatoes. This is our favorite dinner. We don’t really have a name for it, but “the dinner”
Here are some pics of “The Dinner.”
Ingredients (for 2 people and may have a few leftovers):
Red Potaotes (4-6 depending on the size and how many people)
Chicken (5-6 tenders)
1 red pepper
garlic powder
Seasoned Salt
Olive Oil
Directions:
1. Cut up chicken, potatoes, and red peppers all into small slices
2. Oil your fry pan. Place potatoes and chicken in pan. Season the chicken and potatoes. Do not overdo it with the seasoning, because it is gross. I have had the experience.
3. Turn your burner onto med and begin to cook. It should take about 16 minutes for potatoes to soften/become crispy and chicken to cook. Flip often until thoroughly cooked. I usually add red peppers when I have about 5 minutes left. We are not much for cooked veggies so we like them to still be crispy.
4. Season one more time throughout the process of flipping to make sure there is enough flavor.
5. Put on your plate and eat it!!! Yum! Yum!!
This is about the easiest meal ever, but tastes so good!! I love it!! Happy Friday!
Homemade Oreos
Posted: April 26, 2011 Filed under: Desserts, Parties 1 Comment »My Oreo, my Oreo, my homemade Oreos! Oh my! Have you ever had a homemade Oreo?!? Well if you haven’t, you are missing out!! They are the best dessert EVER!! Okay now that is a lot of exclamation points, but these Oreos deserve it!
It has been quite sometime since I posted a recipe so here you go on how to make these yummy, delicious, scumptous Oreos. The recipe can be found at my other favorite cooking blog Smitten Kitchen.
Here are all the ingredients you are going to need.
This is the mixture of everything right after adding the eggs and butter. All your dry ingredients are mixed and then you add the eggs and butter.
After a few minutes of mixing in the butter on medium this is what your mixture will look like. It will all hold together. I was worried the first time I made these that I was doing something wrong. You can walk away for a few and come back if you are impatient.
The cookie balls are pretty small that you should make. I usually double the recipe to make sure I have enough to share. If you don’t double, don’t expect to share or if your friend makes them, there will be no sharing! They are just too good!
After you pull them out of the oven, leave them on the pan for a few minutes or else they will break apart. Cook them, if you are living in Colorado for exactly 9 minutes and take them out. No extra time is needed.
Here are the finished cookies! Yummy!! You do have to make frosting, which for some reason I forgot to take pictures of. Sorry!! With the frosting, I do follow the exact recipe, but add a little milk. Sometimes you need it!

Easter Weekend

Pretty much all weekend, there was rain, but that was not about to ruin my fun. We live in Colorado so rain does not come very often. However, how does it happen that we have had 70 degree weather every other weekend, pretty much and then on Easter it rains. So weird!! You’d think that with Easter being so late, the weather would have been bright and warm, but no there was rain and cold.
Okay enough about the rain, I have some super duper exciting news! I bought a new car this weekend! It is even better than my last new car and that saying a lot. The last one was amazing, but this was even more amazing. It’s gray outside, black inside–oh I don’t need to explain it, here are some pictures of it.

I am still trying to figure out a good name for my car. It is an extremely difficult task. My first car was Gordo after my favorite character on Lizzie McGuire and then my most recent was Elvis, obviously as you all know after the King! Let me know if you have any good name ideas! I’m looking for suggestions.
Molly was so nice and took pictures of me out in the rain yesterday. We stayed out a bit longer to take pictures of my outfit from Easter too. It’s hard to know what to wear when it’s 40 degrees on Easter and you need to look bright. I decided to go a little bright with a bright blue dress and then adding a pastel pink scarf, but then still had to wear boots for the cold. I hope you all had a happy Easter!!
